Man, I started working on your list but I got discouraged by how much I dislike the ogre book. Hunters are meh, but they aren't the massive points-sink that is yhets or maneaters. Both of those units just bleed points, for so so so little return ...
Anyway, I did chop by way through the list until I got to 2250, if you're interested:

I primarily just stripped out the extra junk on the characters and cleaned up the core a touch. I think your tyrant could be better equipped weapon-wise, as 2+ to hit is awesome, but it's more awesome when you've got giantbreaker's S6 going on. There are a lot of possibilities that aren't the Tenderizer, though I will admit that about a year or so ago I caved and have not looked back on taking Big T every game.
On bulls, I actually run ironguts on my dudes, though primarily for modeling purposes as I use them as ahw whenever possible. +1A is too legit not to take (but ironfists look cooler) for models with WS3 that need to kill to survive. I left one bull banner in there because I figure with a character or two in the unit the +1CR will be nice to have and won't necessarily break away

With the belchers, I think you need a bellower (rallying
ftw) or a thunderfist (forcing the enemy to randomize
ftw), which both have their merits. I go bellower still, though I know that t-fist might be more functional for getting at least 1 gun into position.
With the extra 250 points, I would recommend investing in an extra bull for each bull unit (+158), a second gorger (+75) and take a think on the tyrant's gear with the remaining 19. Should you need points you have some places to dig, like the trappers beyond 8, etc. Maneaters are awesome, but they die EXACTLY as easily as an irongut or bull (heavy armor is meh) yet cost oodles more and come in much smaller packs. T4 W3 is ridiculous for 90 pts

That's with the most interesting tyrant build I've seen recently, going with 2/5+ save each of which eats magic weapons. Not as aggro as other tyrant builds, but there's still a mountain of muscle behind that ironfist (and you can always use it for +1A instead of +2
