I just think Shadowsun was sculpted by a different artist and he didn't thoroughly examine the Tau reference material. The new Ethereals are very different in "look and feel" to the first batch, for no particular fluff reason.

So they breathe though that thing on their head?

I beleive it is their nose and it seems resonable to assume they can breath through it.
