Honestly, you've got a really solid 1000 points list. In order to play 2,000 points games, though, you've adding an awful lot of bloat.

I'd focus the list way in and trim it way down and play at a much lower points level.

What would you suggest for 1000pts.

How would you suggest I make a better 2000 pt list?

The biggest problem as-is, is a lack of focus. It's like, you have one of a lot of different types of units. This means that you lack redundancy, and are going to have needlessly complex battle plans.

The first thing I'd do is pick a theme for your army. Do you want elite veterans riding around and blasting stuff? Do you want a massive wave of infantry crashing into your foe?

Once you've determined the theme of your army. Start by getting 3 of the same troops choice that best supports the theme. Once you've gotten that done, pick ONE type of unit with a mix of killing power to be able to handle the things your infantry can't.

Picking and choosing things from the codex at random, or because they look cool, is unfortunately the surest way to a non-competitive list.
