I've been looking over Legion of Everblight trying to figure out a good Thagrosh list (norm and epic). I would greatly appreciate some advice on the warbeasts and units to take with them.

It depends on what style of play you want. There are a few different builds for eThags. There is the shredder landshark list that abuses the synergy between the shredders and Thags feat. And then there's everything else.
I'm not a huge fan of the Shredder storm for eThags as it seems a little one dimentional and lacks hitting power for high arm lists. Plus there is so much fury floating around on the board its a little scary.
I'd also recommend Typhon for either thags because he's just very solid.
For pThags I'd want some heavy infintry to hide behind and then use the rest on beasts.
eThags I run beast heavy with Legionaires as tarpit unit. Seems to work fairly well.

Most of your fury is on Shredders and they'll be engaged by the time it matters. If they fail, it doesn't really matter that much in the end. Pull off Typhon and your other heavy to refill him. The shredders are just effectively solos who can use fury. Put in a couple forsaken if it really bothers you and they can use the excess fury.

For eThags, all you really need is Shredders and Scythean. Ravagore, Carnivean, and Typhon can all be made interesting with him, however.
The real danger with eThags is the Scourge knockdown bomb (spell martyr runs, you arc Scourge through him to the enemy warnoun to knock it down, then feat with MD up. 6 shredders converge on the KD warnoun for auto-hitting boosted+ POW10s).
MD has real synergy with the Scythean however, because its MAT of 6 is not great and P&S17 is somewhat pillow-fisted. MD ups its effective MAT to closer to 8 and P&S closer to 19. This will turn Chain Attack Bloodbath into a real... well... bloodbath.
Carnivean is nice due to animus. Typhon is nice due to affinity. Ravagore is nice in conjunction with Scourge bomb to put a nice POW15 and fire continuous effect onto a warlock before the shredders close in.
Models that you'll like in conjunction with eThags is spell martyr, Strider Deathstalkers, Shepherds, and Forsaken. Thags doesn't really need infantry much due to greater reliance on Shredders and he can't really be screened, but a unit of Legionaries can do a'ight. Automatically Appended Next Post: With pThags... well, if ever you were going to run Blighted Ogrun, pThags is probably the guy to do it with. Gators tend to be just as good/better, however. Medium bases help screen him.
You don't have to run him with elite infantry (although he's the only one you'll really want to do it with) but you can, especially since his feat basically gives you one more Heavy than normal.

So it seems like shredder spam is the way to go? Why not harriers or stingers?
Are there any less spammy lists for ethag?
And for pthag I keep hearing blighted ogrun, any reason in particular?

The reason isn't so much that blighted ogrun are great, it's that there's really nobody else you're going to run them with so you may as well run pThag if you want to run Ogrun. Medium base warlock screened by medium base, that sort of thing.
The reason Shredders are usually the way to go is because they're the most efficient with MD and eThag's feat. You go Rabid and move+attack+attack or run. Then feat Move+attack. Stingers and Harriers don't get as much benefit. They're not bad, though, and you could actually try for a mix of stinger/shredder/harrier as opposed to all Shredder. But if you had to pick just one, it'd be Shredders.
As to less spammy, eThag can run the Trifecta pretty well: Carnivean, Ravagore, Scythean. If you're doing Heavies, though, Saeryn/Vael might be more attractive.

Manifest Destiny. Its one of his spells and its pretty amazing. While in his CNTRL 14" range, models in the battlegroup gain additional die to melee att/ dmg rolls and drop the highest. So for a rabid shredder that's 4 dice to att/ dmg dropping the lowest. Pretty amazing. Although using that with the big boys is similarly amazing. Scytheans bloodbath is more accurate so more killy, etc. Shredder spam is a really used as a means to gum up your oppponent and to remove key solos etc from their list. While that happens Thagrosh and the rest of his force come in to clean up. Its a good time, but I'm not entirely convinced its the ONLY way to play him. Shredder spam is over done and feels a little gimicky to me. I actually find the Legionaires plus Dragon's blood plus Spawning vessel to be a great tarpit with lots of guys. Add 2-4 shredders and then the rest are heavies. I also enjoy a ranged element to my lists so Ravagore is a great go-to for that, but hard to fit in lower point games. Here's my 35 pt list 35 Points: eThagrosh -3 Typhon 12 Scythean 9 X4 Shredders 8 Max Legionnaires 6 Spawning Vessel 3 It gives me lots of stuff to jam them up that are decent at killing, vengeance is something to consider and when they die they spawn more shredders. Move Typhon, Scythean and Thagrosh up the rear and then smash my way through whats left. Thagrosh can fly, so there's that as well

Here's the true Landshark list:
35 pts format
eThagrosh (-3)
19 Shredders (38)
Shredder spam isn't <7 shredders. It's literally 3 waves of ~7 Shredders. T1 you walk forward. T2 Wave 1 goes Rabid and charges in under MD, which is probably enough to alpha strike your opponent's leading screen. W1 dies. T2 W2 does the same, Thag feats, and 6 Shredders converge on the warcaster hitting roughly Def17 with POW23.
Obviously you have some horrible matchups. Heavy armor lists will simply trample through the Shredders and against a good Reach infantry screen or something that can keep your landsharks off their warnoun eThags generally loses the attrition battle due to trading 1 2 pt model for 1 <2 pt model.
But you can easily make a more balanced Thags list and still be running 4-6 shredders. He makes 'em great, and it's a nonlinear assassination method.
