Well, she is performing well so far. I did a hot seasoning run to season the cooking chamber, and have already grilled porkburgers, pork chops, and some of the best grilled corn I've ever had. Today, I practice smoking with a bone - in Turkey breast that I've brined for 12 hours. Smoking a brisket is a serious time commitment. But it will come.

I've jsut started learning to really grill. I'm not much of an outdoor person, and if I can't microwave something, I usually feel like it's too long to wait for it, but grilling hits some primal aspect I wasnt' aware of. I have a nice gas grill, but I like yours. That is a serious grill for a serious grillmaster. When can I come over?

grilling is indeed an artform... it needs a special kind of man to become a master in that field...well to make a long story short... when i do the grilling, it is often that i eat my steak raw....and i mean it... you know that special rawness...burnt from the outside and bloody raw on the inside....

Vik likes his black n blue. I'm a medium rare guy, nice crust on the outside, pink throughout. It is indeed an artform. The smoker side on this unit is not sealed up tight, this grill will be the epic thing it needs to be as soon as I apply some high heat silicone around the firebox and find some gasketing material (hard to find this far away from wood stove season) to keep smoke leaking from the doors. Without those seals, it s a little trouble to maintain a steady 225 F smoking temperature, although my turkey breast yesterday was a great success.

Sounds pretty amazing! I will take my hat off to our cousins across the pond..... their way of BBQ is pretty inpressive... time, effort and amazing results... doesn't resemble in anyway the typical UK BBQ of flaming a poor cut of meat before the next rain shower soaks the coals! It seems to be a real full day event that brings people together....

Impressive grill also!

oh...and i don´t like meat...i need meat...it´s an urge... i had sometimes these urges so strong that i litterlally ate my meat raw... i am mostly the cook at home...and when i cook, fry or whatever...i nip here and there probably a handfull of raw meat... for all the haters... try it... unsalted meat tastes way different than you might think... and it is refreshing....ach... you wouldn´t believe me^^

Not that I don't believe you Vik, but I won't touch meat unless it's grilled like a hockey puck, black on the outside and black inside too. I've had actual food poisoning from undercooked meat at a fast food place. My wife and I both went to the emergency room that night after she passed out from it and I had vomited more than ever. Luckily our kids were adamant about getting mcdonalds and didn't eat what we got from Burger King. Neither my wife of I even ate our full sandwiches because they tasted funny, within an hour we were both "dying", our families drove out to take us to the ER and watch the kids, then my dad went back and grabbed the uneaten portion of burgers from our trash cans for them to test the meat. Burger king paid our medical bills and offered free food for a year.... fool (poison) me once.

I'm sure your selections of meat will be better, but I take all my meat well done from that point on.

well... i believe you to the letter... raw meat is really nothing to take lightly... and... well if push comes to shove i am a MC D kinda man anyway.... so burger king never was my first, second or third choice...donalds fries tastes better anyway^^
but that is a very hard case....my wife caught me whilst reading that horror story...and i told her your perils...
(i am a fierce miser in some cases so i might have caved in and would have grabbed the free food year option... but...your chioice was wiser )
also... you can catch a lot of evil worms and bacteria by eating raw meat... somehow i had bad times only from not throuhly cooked meat... raw never did me harm... i guess it is a case of 999 out of 1000...well...and lucky me, i lost count...

Nowadays, we have fancy, inexpensive digital probe thermometers that constantly monitor the internal temperature and beep when it reaches the proper safe temper a ture. You don't need to cook everything into ash to be safe. When the turkey got to 165 F, it was done and I took it off, let it rest in foil, and it was pretty damn tasty. Science offers the answer here, bad things die at certain temps, all the time, everytime.

when i was working/learning as a food retailer, a classmate back then told me to never eat the remulade at a local food chain (they serve mostly fish...) cause the green hue of the sauce never comes from herbs...understood?....*yuck*

I like a lot of carbon on my meat. I paid too much attention in biology class to the parasite lessons. I want my meat cooked thoroughly. Any charcoal in my burger and it's good to go.

Well, home ownership is fantastic, but it forces me to prioritize projects. The nerd cave's first priority is proper lighting, then paint, but other house things like replacing the mailbox, garbage disposal, etc. Are first. This is Gen Con week, but we only went for a day this year due to the great hotel debacle, so my loot consisted of quality over quantity.
GOT Risk, Star Wars Imperial Assault, a fantastic set of generic zombicide-esque rules called Skirmish Outbreak, a rare hardcover Necromunda book, I got to see Galorn at the Games Gears booth and picked up some more of their fantastic brushes, some new Badger colored primers, and some stuff from a new to me company, Scale 75! A GREAT large scale Dwarf warrior figure and (like I need another hole in my head) more paint, in this case a set of great flesh tones and sweet metallics.

I've been waiting to see what dave got this year. Scale 75 stuff looks amazing from the pics I've seen. Will have to look into the zombie skirmish rules as I've been infected.

Also tomorrow is the one year anniversary of the Croatoan virus outbreak in Chicago. At least In The TV show Supernatural, just saw that episode again, so kind of appropriate.

I have to say I am interested on your views as to the Scale 75 paints, I have been admiring there sets for ages but have not took the jump yet so some feedback would be great

Actually it was the skin sets and leather (browns) that nearly tempted me to try them.
