1 Organ Gun

I don't use all the above at the same time but I can build decent (Dwarf Themed) lists with them except that I have nothing big to tank with (vs Archaeon, Skarbrand, etc.).

Any suggestions on a Hero / Monster from any Order faction to add?

I guess a Magma would make sense thematically but it seems to be better against Hordes? What about a Stardrake? Open to suggestions. Does NOT have to be super competitive.

Uh, yeah, Magmadroths are amazing! As for big things for fighting Skarbrand etc, the new Stardrake seems to be filling of that role. Order didn't really have to many big bads, so the Stardrake had to fill the position. As for loadout, the hammers are always great for massive damage (which some of may be unsaveable, need to check that).
