I've started getting into Infinity with Ariadna and was wondering about something. I'm using this as a reference on where to start and I was wondering if I could deploy mines along with my troops? Can I do that or do I have to use a Order/ARO to deploy mines?

A model that has the Minelayer ability can start the game with one mine deployed already. A model equipped with mines can drop one as a short skill.

As it requires the spending of a short skill/ part of an order, unless they have the "minelayer" skill, they can't drop a mine during deployment.

Doing this (minelayer) also removed one of the three mines the troop carries (they have 3 each).

I'm OVER 50 (and so far over everyone's BS, too).

To slightly piggyback onto this question, how tall are mines? Are they just the size of a base? Does their blast radius (tip of teardrop template) need to touch the base when they're triggered?

This has come up a few times in my games when deploying mines a little too close to scenery pieces.

Depends if they are undiscovered or not.

If still camo'd, they are the height of an S2 silhouette.
Once discovered, they are the height of their bases.

So if it's behind a low wall, then yes, you CAN discover the marker - but once you do, you no longer have LoF to it.

Remember also a low wall can provide total cover from a mine quite easily., especially if it is quite near to the mine

A discovered mine, certainly.
It will also assist in making it harder to discover a camouflaged one.

(a camouflaged mine in partial cover is a -6 from willpower to discover).

Once discovered, it will be out of LoF.
