No it can't. It can neither attack the sentinels (he cannot elect to either hit them or not to hit them in the first place) and he cannot try to attack the griffon that comes in after either.
A model with Counter charge requires that (a) an enemy model finish its move within 6' of it, and for the counter charging model to not be engaged.
If you've engaged him, one of the triggering conditions (is him being unengaged) cannot be met, so he therefore cannot counter charge at all and he cannot otherwise act outside of his own activation- this isn't
40k where you both attack each other. And since he cannot act outside of his activation in any other circumstance, he has to take two sentinels and a griffon to the face.
