Either Castellan Crowe or Lemartes. Both models look amazing and I love how much better Lemartes looks over a Terminator Chaplain. Also Catellan Crowe looks amazing and has amazing fluff.

40k is rough.
The above mentioned chaplain (jet pack or terminator) are very well done. The Chaos Terminator Lord is well done. The new incubi, even if they don't have mandiblasters, are really well done. Rakkarth is also done really well.
But all that said, the one model I have multiples of just because I like the way it looks and not because I need it for my army (I don't play marines...'yet') is the Space Marine Dreadnaught.
Has lots of options.
Has a lot of detail.
Has a lot of room for freehand and conversion.
Has half a dozen different kits and a lot of FW support to really go nuts with.

Not 40K, 28mm (though there is a 28mm version), or from GW but I've finally bought (NSFW before you click the link) 40mm Artemis and plan to make a small hoplite unit of converted Artemis's.
My favorite "every day" model at the moment.

Great mini though.
GW wise I like Ulrik the Slayer - The face that Launched a thousand conversions. I am liking Heresys Trenchers and sci fi troopers atm as well as Melusine from Hobby Link Japn - Conversion fodder!
My tastes change though so what I ilke today, may not be what I like in a year or twos time.

I personnaly dont like the Astorath model (and his fluff  )
The Death Company are a nice box set indeed.
Further, I stay at the Terminator Chaplain. Second choice would be the golden wonderboy called 'the Sanguinor'. Or the Ork warboss with squig... Nah, golden wonderboy.

This guy. Everything about him is so grim dark and has the most awesome pose in the world (cant say i agree with GW's paint scheme though). Going to be a vindicare assassin in my army.
