 If you take a Mek w/ force field does it now mean the boys lose their infiltrate ability (Standard troops choice of Kommandos as used in the clan rules) By taking the Mek as a choice with the unit, does this now mean your total size has to be culled down from 10 to 7 because of the grot oilers you are required to take with the Mek if you want to place them in a looted rhino?

The Meks are a squad upgrade, so they would have the squad's special rules (such as infiltrate). The presence of a KFF in the unit wouldn't change that fact.

A Rhino can only transport ten models (assuming Space Marines in power armor = models) and Grots taken as wargear are still models, so yes if you wanted the unit to embark on a Rhino you'd need to have ten or less models in the unit.
