I have models a vox caster in each of my IG squad, just to add some variety.  I did not pay for the vox casters nor do I intend to use any of them in the game.  I also put track guards on all my tanks, but again, I'm did not pay nor do I intend to use them.  Before I play someone that I have never met before, I always explain to them that the vox and track guards in the army are there for their aesthetics. 

I haven't had any problems playing in local tournaments, do you guys think I would have problems at GTs

There are 2 ways that you will have issues.

1. You find a wysiwyg lawyer.

2. You start using those upgrades but only take them on some tanks/units.

I would have no issue with it in a GT unless you start to fall into "2."

All problems can be solved with proper use of a high powered rifle and a water tower

I agree. If I started to do number 2, I would kick my own ass. Besides, vox and track guards are such bad upgrades, I can't think of a time when I would use them.

Well, if you meet a WYSIWYG lawyer, remind them that the rule states that you must model everything you buy. you do not have to buy everything you model.

this can get ugly with things like heavy weapons and powerfists and the like, but for little things like Vox casters and track guards, I can't imagine you ever having a problem. Lots of people model frag grenades on their Marines, but don't pay for them.
