I've never played 40k before, although I may be joining a bunch of friends in their regular rounds of games. So, this is here partly to get an idea of how to handle stuff I might run against.

I'm pretty sure these are the troops I want to start with.

Squad of 10 Battle Sisters (146)
+Veteran Superior
+2 Flamer
+Frag grenades for everyone

I'm not really familiar with the witch hunters codex but you are going to need some kind of anti armor punch.  Even at 500 pts.  Can any of your troops , preferably the seraphim, take melta-bombs?  You could probably lower the size of your main troop squads by one to pay for the cost.

The only real anti-heavy-armor options that the SoBs get are melta guns (and I believe that the standard troop squads can't have them) and the Exorcist.

In 500 points, you shouldn't see too many heavy vehicles, and the sisters have the staying power to work on mopping everything but the enemy's one heavy vehicle.

First, I'd lose the bolter and the stake xbow off the Cannoness. Giving an assaulty model a rapid fire weapon doesn't really make sense, and the xbow is very limited. Give her the Inferno Pistol (I think it's called), which can pop tanks just fine along with a power weapon. Get the Seraphim sister superior a power weapon as well. Heck, give all your sister superiors power weapons.

Second, lose the frag grenades, as SoBs aren't assault troops. I'd seriously consider dropping the stormbolters, and just have each squad pack one flamer and one heavy flamer.
