I am a big fan of the rules for lightning claws, but not too much of the actual models. There are a few that look good, but generally they just look like pokey powerfiststs to me. In game terms, would it be too much of a stretch to have the lightning claws be Chainswords with power cables connecting them to a power source? Like power chainswords?

I've seen dual-wielded powerswords count as lightning claws. If those were 2 glowy power-cabled chainswords, I'd be cool with it. But they have to be glowy.

Okay, the next question is, what chainswords should I start collecting for Terminator sized models? Or should I just bulk out regular chainswords with plasticard?

Most likely Deathguard, I like me some Nurgle, but maybe a World Eaters warband, or even Black Legion so I can field a little of both.

I don't think you could get away with it in a wysiwyg setting. I suspect they will look way too much like currently existent weaponry. But since you are using them on Terminator minis, there should be less of a problem.
So... Nurgle could use Ork sized weapons just fine. Black legion might want some sanding down, and the World Eaters are somewhere in between.

for my catachan officer i used the mordhiem dog with a chain leash as a power weapon & trademark item.
