To prevent your opponents focus their fire on your expensive bikernobz,you need some fast units to go with them.I think...maybe normal bikers or trukkboyz will work.

You may also consider breaking those mobs of boyz up into smaller groups. Maybe two 20-man mobs and two 25-man mobs or some other variation. It will allow you to spread your fire around more and will fore you opponent to choose between squads when he targets them.

Well,between kopta and kan,perhaps we cannnot conclude that one is clearly better than other...
But for kans,running them in sqadron may be better.You can allocate the damage.

terrible idea cause he just needs one round of shooting on each mob then 20 is on the edgde to be to low i always run my mobs 30

All of your lists were ok.
And the last was probably the best.
I think it was good to get two HQ happening because HQ units give the orks their best options.
I think as you play this list you will start to make a few small changes here and there as you find what works.
Also rokkits in troops are not always going to do anything. BS 2 sucks, and if you are in CC that is redundant. Power Klaws in trucks already give you decent anti armour, as does the boss.
Its easy to sympathise with guys making ork lists. Its possible to change it and change it forever and never be satisfied.
The only way to settle the army is play it and change it according to how it fares on the table.

With troops for example you may find that 20 is as good as 30 in many situations.
