I've finally managed to play a few games, learned a lot and made a few changes. Here is my current list, I'm trying to make this close to competetive-hows this?

-Characters-
Runelord; Anvil of Doom, Shield, RoStone. RoSpellbreaking
Thane; BSB, MRoGromril
Dragonslayer;

-Core-
24xWarriors; FC, Shields.
10xThunderers; Shields.
10xQuarrellers; Shields.

-Special-
19xHammerers; FC, Shield, RoCourage
2xBolt Throwers; Engineers w/t BoP, RoPenetration on one.
8xMiners
15xSlayers

-Rare-
Organ Gun;
Gyrocopter;

It's a solid Dwarf list, but the Anvil doesn't buy you too much in this style list, other than letting it be easier for you to shoot the big stuff.

I would drop the Brace of Pistols from the Engineer and see if you can find the points to get RoPenetration on both (use the RoBurning in combo with RoPenetration to get two S7 bolt throwers).

The only problem I have with Dwarfs in general, after playing them for about 2 years before selling them is that not a whole lot is "Competitive" against really good lists and players. At the end of the day, you still just get something fast into the shooters and then just avoid the blocks unless you can flank them. All you need is 300VP's to get the win, or at worst you'll just force a Draw off them.

I understand that dwarves aren't extremely competetive to begin with and to counter this, my next army will be VC-for now though, since I like dwarves and have already invested I'm going to do my best to make a list that I can do well with. A second S7 Bolt thrower would be good-but are the BoP the first thing to go in this list? I would love someone to tell me that I'd be ok with a unit of Ironbreakers over the hammerers too-with a banner with the Runes of battle and Stoicism-I really hate hammerers, but I feel like great weapons are important and stubborn is key. Is there any hope for the Ironbreakers though? Please? ;-)

I converted my Hammerers from plastic. With Shields, their save is almost as good as the Iron Breakers and they hit just as hard in that configuration. Generally, if something's going to hit you with weapons high enough to negate your save (and lets face it, when I played I faced off against S6 stuff all the freaking time, and that's what my lists now run tons of), the 2+ isn't that big over the 3+.

Stubborn + Immunity to Fear/Terror is what makes the Hammerers so good. Not that it matters too much, you're still running a big block that can get beaten down and give up enough points to cause a loss, so if you REALLY want Iron Breakers, then go with them.

hammerer's with shields are only 4+ not 3+...

Note: D+ can take over 12 hours of driving in Canada. It's no small task here.

They're 3+ when using their HWs.

Since I haven't actually bought anything key for my army, besides the ranged units and warriors-what is in this forums opinion the strongest dwarf build? I won't run any special characters so Thorek is out (WAY out, I hate that they even put gak like that in the book), but beside's MR-Thorek and his builds, what are some of the more competetive dwarf lists around? Is mine about standard?

Depends on your play style. No one build is better than everything out there. You gotta take into account your abilities as a player, and your strengths as a strategist. I, personally, am really good at ranged attacks, and make poor decisions at close quarters, therefore I'd tell you to get a lot of shooty dwarfs. All armies have multiple play styles. You need to find what suits you.

There are really two anvil paradigms.

The first one just uses it's wrath and ruin rune to slow stuff down so a gunline can have more turns to shoot at it.

The second one makes use of the manoeverability the anvil can give you, whilst reducing the manoeverability of hostile flanking units and flyers.

I think yours is a little stuck between the two. My current anvil list has 2 BTs, an OG and a Grudge throwers and then no shooting units except some rangers. But i've seen some nice lists over at bugmansbrewery.com which are really aggressive, with no war machines except the Gyro.
