I good place to start is woodland scenics, 15mm is 1/100 scale which is close to HO scale (1/87)...All the skills you'll need to build scenery can be found in HO scale books on model railroading, one of the best authors on the subject is Dave Ferry ( check Spelling) we has a few great books.
The woodland scenic site used to have a how to video on making trees or you can buy the pre made
Another must have Item is GWs terrain making book it gives you the tips and easy how tos that you'll need for making gaming terrain which is a bit different than scenery for trains because you don't use as much so as to allow game play. also check out terrain genius web site for terrain making how to info.

I know this ounds obvious, but have you tried the Terrain/Modelling sections of the FOW forums. There is loads of projects people have done for insiration and i'm sure there also demonstrations on producing scenery as well. I'm definitely sure I have seen trench/dug-in projects before. Some of the gaming boards are incredible!

If you're looking for pretty decently priced FOW terrain, check out www.red-dragon-terrain.com they have an assortment of hills and trees in 15mm scale, although a lot of the stuff is for 28mm gaming as well. Here's a pic of one of the 15mm pieces.
