I'm looking to initially put together 2,000 points, and so far I have two of the new Revanents, a Warlock Titan, a Regular Eldar Titan with all weapon options, 10 Falcons, 4 Wave Serpents, a grundle of jetbikes, Vypers, weapons platforms and Guardians, and about 5 sprues worth each of the various aspect warriors, farseers and Warlocks.
Since I don't want to end up spending a lot of money on things I might not end up using, what should I add to this to make for an all around balanced and fun army to play?

I don't think you need anything else! Well, maybe some Nightwings as Eldar A-A can be a bit thin on the ground, but you can easily field 3000 points there by looks of it.

Only additional units I would suggest includes some AA weapons and fighters/bombers.

I have a very large Eldar army with 4 Revenants, 1 Warlock, and 3 Phantoms. Tons of Falcons, 6 Fire Prisms, and I still need more. The problem with your Titans is that a ShadowSword company on Overwatch will eat you to pieces, as will his artillery companies. I know. My friend uses my MASSIVE IG army and I lose every time. I would highly recommend some air units to take out the artillery, and a company or two of Scorpians to take out his Super Heavy Tanks, and his regular tank companies. Leman Russ Companies are a pain in the ass.

My falcons get eaten alive by artillery and his infantry advance and take buildings. If you use your Revenants and Phantoms well together and focus on one Company at a time you should do well. Its just a matter of getting there in one piece. FirePrisms are great if you can get them lined up on a target.
