I come from a Tau background. However, found I wanted to start anew with the Imperial Guard (as a static position appeals to my tactical senses). So, I bought a Cadian battle force and a Leman Russ tank. With the Tau, I was used to a simple change of color scheme to change what world the army is from, and I assumed I could do this here: I planned to change my boring old Cadian force into Krieg Death Korps. However, I learned that there are, in fact, separate Krieg models, that looked nothing like the Cadians. Is it plausible for the Cadian troops I have in my possession to be converted into Krieg troops? If so, how?

You are certainly allowed to do so.
Is it plausible? Green stuff cost + time spent = It'll be cheaper buying the FW ones.

But if you enjoy doing it , by all means go for it!

It's plausible, Prussia, but it will be a buttload of work, a buttload of time invested, and a buttload of components you'll have to get your hands on.

See, the difference in changing a Tau army is the fact that you have to remember...the equipment is standardized, throughout the entire Tau Empire.
With the Imperium of Man being so much vaster...you don't have that standardization. Especially not with the differing Forge Worlds in existence, who basically do nothing but produce arms, armor, and equipment that gets spread throughout the region they're in.
Cadia, for example, equipment-wise is supplied by several Forge Worlds within their region and their equipment is generally restricted to that on the basis that Cadians just plain don't care for anything that they haven't used before. Krieg on the other hand has armorers within the regiment who make things from scratch, along with the Quartermasters, who scour the fallen Kriegers for equipment and the fact that not only does Krieg have that regard...but also the fact that Krieg makes use of cloning tech for their losses can bring up another difficulty if they were to just hope for resupply every few months.

What I'm getting across here is you do not *have* to have a Krieg or a Cadian army, or restrict yourself strictly to those models and have a pure regiment. There is nothing saying that you cannot have Krieg models from Forge World in the same army. Imperial Crusades end up with all kinds of wacky combinations(Cadians fighting alongside Catachans, Elysians fighting alongside Vostroyans, etc)....why not make your own background to justify having whatever models you like?
