I have cut off the head of a metal piece for a conversion to put a plastic one on the model but there is a gap between the metal and the head that is hard to describe. Is greenstuff strong enough to connect these two together?

Greenstuff is not a glue substitute. Attach the head and then use greenstuff to fill in the gap(s).

I have found that when you put superglue on procreate that it is as hard as concrete in a few minutes.
