Alright now I've never seen elfen leid, so this took some research on my part. (it's not my style to watch after all)

I'm going to have to start by suggesting Mahou Shoujo Madoka Magika http://en.wikipedia.org/wiki/Puella_Magi_Madoka_Magica ( <----oh yea spoilers) Watch the first three episodes before you shoot it down. It's not a normal show...

After some short searching for general recommendations from my anime sources, the following might appeal to you:

Death note
Code Geass
Claymore
D. Gray-man

Beyond those I can't come up with any as the show you started with is a type I don't really watch. Hopefully I helped! If you want more suggestions, please post other shows you liked and I'll run the gauntlet again.

Yumekui Merry. Deals with dream demons that infect people and take them over, should you kill them then you lose your dreams, hopes and aspirations and overall a very good show. Light hearted comedy and the female lead is very easy to like and thankfully not a giant chest that talks. Actual character.

What? Don't look at me like that; my wife made me watch it.
Spoiler:
I really enjoyed it once I got into it.

If you haven't seen it, Gankutsuo is just plain amazing. It's the Count of Monte Cristo set in far future Paris; 'tis full of win on so many levels.

Samurai 7 was very fun as well, just don't get too attached to your favorite characters.

The last anime I watched was Claymore, loved nearly every part of it. I can't remember if the manga is finally finished or not, but the anime lines up with the manga up until the last two or three episodes where it makes its own 'to be continued' ending that was pretty awesome.

There's an anime I'm trying to remember that I thought was pretty interesting... it had Paranoid in the title... I think it was Paranoid Agent.

EDIT:

Looked it up on google... its Paranoia Agent.

Higurashi no Naku Koro ni (My favourite Anime) pretty violent like Elfen Lied, and on similar lines to Paranoia Agent, kinda about people who get paranoid, etc.
Also would recommend Umineko no Naku Koro ni, those sound similar, but they're not really by the same company and same genre, different story.

Alright, i feel like chipping in here, and OP's comments about "seeing it all" sounds almost like a challenge, so here goes:

Outlanders (good short movie)
Photon (made by the people behind Tenchi Muyo. 3 hours long but all on one dvd)
Orguss & Orguss 02 (oldies but goodies)
Brain Powered (ditto)
Blassreiter (kinda weird but i like it. Anime/CGI combo)
Martian Successor Nadesico (funny harem-type with mecha)
Macross Plus (OVA, not the movie. Don't watch it if you didn't like Top Gun)

that's what i could think of off the top of my head. Oh, and +1 for Hellsing, either of them.

Death Note is a good one.

It's really smart and it's a good battle of wits when it boils down to it.

Area 88. Intense dog fights coupled with eargasmic trance.

Maybe you hang out with immature women. Maybe you're attracted to immature women because you think they'll let you shpadoink them.

Seconded. Also, i forgot Yukikaze. A lot like Area 88, Air-combat themed, short but very cool.

If you are a Robotech/Macross fan check out Macross Frontier, you'll need to download fan subs as it is not released in the US. They came close but it got shot down last minute.

Two more that I would recommend that you would have to get fan subs for are Durarara (yeah it's named that) and Soul Eater.

Durarara is a mystical/mystery kind of series, very hard to describe but it is very good, you'll start out a bit confused but it all comes together in the end and everyone that I know that has seen it loved it.

Soul Eater is a bit goofy but is entertaining. It's a fantasy type setting where Death (grim reaper death) has setup a school to train what are basically demon hunters. Art style is stylized but good. It's one of the longer series (aka ones that never seem to end) but fun to watch.

Macross Frontier is basically a re-imaging of the original series, being a Robotech/Macross fan though I loved it.

Thinking about it more another anime I just started watching is Beelzebub. It's a comedy type anime where the child of the demon king comes to the real world and a juvenile deliquent has to care for him. I've only watched two episodes but liking it so far.

If you've seen all of these I'll post some more later. My group of friends watches so much random anime I don't remember all of them.
