In the old fluff, she was a holy warrior that, after her ascension, accompanied the Imperial forces on a prolonged campaign until she was ended, never to be heard from again.

In the new version, she is an avenging angel that can just pop up anywhere and anytime out of nowhere, do some crazy and inspiring stuff, and then vanish just as quickly.

Fluffwise, I do think that real permanent death due to a mundane kill would take away from her coolness. This sort of fate is reserved for mortal forces like Guardsmen, Sisters or Marines. Then again, I am just as biased as anyone - I'm sure there's a large number of people who think it would be uncool if Marneus Calgar would die to a lasgun. It's a matter of perspective, and where one would see the underdog doing the kill as an awesome hero, fans of the "loser" would grumble.
Everyone wants his or her heroes to end in an epic way, be it in combat against another mighty creature or due to being hopelessly outnumbered. The question only is: who is the hero. And this is defined entirely by personal preferences.

I prefer the idea of immortal warriors having some sort of divine destiny; nothing 'mundane' can kill them, they'll get up miraculously from fates reserved for Guardsmen and whatnot... but when it comes to an epically awesome way to die, that's it.

I am thinking about battles only they could accomplish, like holding off a Daemon long enough for a city to be evacuated, or just generally sacrificing themselves for the good of others... Facing a threat so massive that there is no return.

They're basically the imperial version of daemon princes aren't they?

Would it be so odd to call them angels? I mean if there the opposite of Daemons.

I tried being normal but it's boring so now I'm back to being insane

True, but its more a 'regular' person given super-powers by the Emperor's presence in the warp rather than the opposite to a daemon. The same way a daemon prince used to be a space marine, but is changed by the Gods favour/lols into a creature of the warp.

I think the reason why they're not angels is because Angels are not grimdark enough.

Well, the living saint in Atlas Infernal, is an immortal. Get's blown up by an Astartes frag grenade, only to see the parts squirm back together, stand up, and shoot the dude.

Spoiler:
So Ahriman put's her in a furnace for as long as he likes. The roasted skeleton still trying to regenerate.

Only Ahriman would think of something like that.

Arguing with some people is like playing chess with a pigeon. You can play the best chess in the world, but at the end of the day the pigeon will still knock all the pieces off the board and then gak all over it.

Can't get to be a big time chaos sorcerer without being creative somewhere along the way

Because wrapping an entire planet in a warp storm because he didn't like mutation much isn't creative at all...
