From playing the Pokemon tcg which requires a lot of wound tracking on multiwound characters, I have found a good "poor man's method" (as in too poor to afford anything) for tracking wounds is using the value of coins. In the United States, pennies (1 cent), nickels (5 cents), and dimes (10 cents) provide a convenient range of values that work for most models. You also do not need to worry as much about placement as if you bump the stack, you can just pick up the coins. This could be difficult if you have a lot of multiwound characters together as the stacks get confused, but GW did suggest that they were doing away with deathstars.

The problem with this method in 40k is "making change" when you lose wounds adding time to the game.
I tend to count up when using coins, so you would just remove a chunk of the stack and replace is with a new, higher value coin when damage is dealt. It is a problem though, especially with multiwound attacks in the mix.

That works better assuming that you are not healing models at any point.

I'm planning to make some spinning discs that track hit points. I've got so many cardboard wheels from Star Trek Attack Wing that I can spare a few for the really big-wound models

Actually they've already had them up for sale for a while now anyway.
