I think one of my favourite zombie games recently has been Mantics - The walking dead: All out war, this game has some fantastic elements all mixed into one, it can be played as a Vs or a co-op game so you can mix it up with surviving together and facing off another bunch of survivors, the zombies all work off a simple A.I mechanic which really executes clever use of sound and movements, your weapons can be unreliable (break/run out of ammo) and you can scavenge items to try and replenish your items.

the game also has a pretty solid threat/panic system where the longer you stay in the game the more dangerous the area becomes and your characters start making random stupid moves as they get more panicked.

If you are looking for a couple of ideas its a great place to start and expand what they have already done.
