So i am playing with the idea of a Aristocratic Vampire list.

It's nice, I like the theme, pretty cool. However, in my experience, it's best to have more units of core then heroes and lords.
IE. Heroes and lords are necessary, but they won't last if there aren't enough units about. Plus, you will need some brute combat res-wins in order to win.

I would drop the Wight King or the Vampire 'maid', personally.

But it is a nice list.

by dropping the maid i can i could get another unit of 31ghouls and then by dropping 5grave guards and my crypt ghast's i could boost the unit up to 40 as well. That gives me 3 hordes of 40ghouls

I'd go larger than 40. I run 45-50, and it gives a really nice option. I can go in 5 wide and 10 deep. I'm likely to break a lot of opponents in the first round. If it turns into a grind, I combat reform into horde formation to maximize attacks.

With 40, the losses in the first round of combat often mean I don't have a full horde by the 2nd or 3rd round.

The reason i want the Maid is because i want the lore of metal since i am mostly facing WoC

Lore of Light or shadow will do you better against WoC. Blasting their armor doesnt fix the underlying fact that the warriors are better than anything you can put on the table. Even blood knights have trouble taking on chaos knights.

In what way do light and shadow help me?

Shadow to debuff them and for okrams mindrazor and shades

Don't use Lore of Light if you are tailoring against WoC. They often bring a Wizard with the 'I can use your spells' ability and your Vampire Counts won't like being on the receiving end of Light Magic.
