So basically I'm planning on selliing and/or trading lmy SMs (most unboxed and nearly all unprimed or painted)

I was looking for a cool HQ unit and saw the amazing job they did on CC, so I thought I'd have him "play-as" the real character but have him look Valhallan.

So, my question is, how hard would it be to use green stuff and make him a beard (its cold on Valhalla afterall), and use the same green stuff to make a Valhalan Ice Warruirs type hat.

The Frozen North

That would be a fairly easy venture into green stuff. Do you have any experience with GS at all? I am going to assume not, so just to be safe here goes the general procedure I would follow:

Mix enough putty to be about the size of a pea and split that roughly in 2.

Remember to wet the tool you are using with either a bit of water, mineral oil, or petroleum jelly or the GS will stick to your tools. This will also enable you to get smoother results.

Take part of it and apply it to the top of his head and shape into a basic cylinder.

Take the other portion of the GS and apply it to his face and mold it into the general beard shape you want.

Leave these until the GS gets 'leather hard' as I find this is the best time to make details such as hair. From here you can make the hair texture without everything pushing around quite so much.
