Mine has to be the painting and modeling section. I just LOVE seeing what people come up with and create in there. Honestly some of the things that people come up with in there blows my mind.

I also really love the painting and modeling showcase as well but it isnt as cool as the one afore mentioned

Well, each has it's ups and downs...

I personally frequent YMDC and Tactics, but that's because I'm a sort of cold, calculating kinda guy. I enjoy seeing the game rules broken up and statistically and intuitively analyzed by posters from a whole range of experience levels and differing opinions. I've found a WHOLE LOT of friction happening too, so be wary

Of course, it's always siiiiick to check out some insane new creation. Featured Image gives me a starter...

The OT forum is often very funny. I like the 40k army list section, I like reading (and writting) lists (and occasionally giving advice). P&M logs and showcase forums are great if i'm bored, some great work is shown in them.

Great Fora:
P&M Blogs - Following someone's demented idea to it's ecstatic conclusion is a big draw.
P&M Showcase - Scan the titles for something worthwhile, and then ogle the pretties inside. Rarely disappoints.
Both of these fora are let down by the search function and Auto-Subscribe (by the time I realised about using subscribe, my subscribed list was monstrous) but alleviated by Exalt Thread.
News and Rumours: Some of our rumour posters (most notably Kroothawk) work pretty damn hard to keep that place working, and I love getting to see what small manufacturers are producing.
OT: Undeserving of it's reputation, I find OT a fun read a lot of the time. Just faze out the multiquote wars when they get too tedious and it's a fine place to browse.
DCM: Nice group of chaps (and more rarely, Chappettes.).
Privateer Fora: The PP community on Dakka is quite level headed, patient with newbies, and gives out helpful and balanced advice. A great addition to the community.

Good Fora:
all the "Other Games" fora- excellent content from time to time, let down by lower levels of traffic.
Discussions: Some good time wasting gems in here, along with a lot of noise.
WFB/W40K Tactics: Sometimes I see some pretty poor advice being bandied about in these fora, which is irritating.
WFB Battle Reports: Relentless and Boss Salvage's reports make this forum worth it for me, on their own.

Fora I Barely Ever Use:
Fantasy/40K Background: The legions of Fluff Conservatives and Imperium Rules OK fanboys make this an unpleasant place to read at times.
40K General: Almost all spam, or boring.

Fora I Basically Never Use:
All the others!

OT, DCM and Dakka Fiction are my favourites.

The various Army List, YMDC, Tactics and General forums are okay, but a lot more people tend to be up their own arses there than in OT/DCM/DF.

Probably OT. I love looking at pictures of pretty models, but the conversation is more or less... "Great model _____" "Thanks!" "Awesome model man, love the cape" "thanks!".. Gets really old after a while, and I just want to look at models without having to scan the thread through all the nonsense posts. Thank god for 'filter thread'

40k general is boring too. Same old threads that will pop up until the end of time "Which primarch is coolest" "Are GK OP?" etc.
