What would you say is the best type of leman russ tank for a IG army or best grouping of different types in 3 squadrons of 3?

Probably the standard Main Battle Tank is the best "value" for points.

I'm a little compulsive so I have to have my squadrons identical. (2 LRMBT, 3 Punishers, 2 Demolishers, etc.)

For squadrons though if you're not crazy like me. Use a LRMBT or Exterminator as a front man or shield for your expensive Executioner or Punisher.
E.G.
HVY SUPPORT 1
Exterminator w/hvy bolter sponsons
Punisher w/Pask, hvy bolter sponsons

HVY SUPPORT 2
LRMBT
Demolisher

Someone else may have more/better ideas.

40k is as exciting as riding a pony, which doesn't sound very exciting.......

"Best" Is a very loose term for tactical flexability just a strait LRBT is the one you want. It has range High STR good AP and a Large Template is nice
If you want to mow down boys like the weeds in the yard, Punisher is the best, and so on and so forth

Do you ever go into a fight thinking "there's no point giving it my best, I'll get another chance later?"

We only ever get one shot marlin. Life is one shot

Now that you can snap fire additional weapons on the move, a LRBT is money when equipped with 3x HB. 9 S5 shots plus a large template is good for mowing down MEQ and below at virtually any move distance.

LRBT's are all incredibly strong at what their variant is meant to do.

They are there to close up holes in your list: Lack AP2, get the plasmacannon variant. Lack anti-monstrous creature/GEQ, punisher. Lack long range anti-tank, get a Vanq. The list goes on.
