just curious what the differences in the starter sets are. I know kickoff lacks the cards and has a stripped down rulebook, but what else? Also how stripped down are the rules? Is it just fluffless or is it more like a set of quickstart rules?

Kickoff has Two less models per team (same composition of the seperate box sets), no Cards, no ref, and the stripped down rules. I don't think it has a tablet of team sheets either.

The Standard version Humans has 4 Strikers, 4 Jacks, and 2 Guards versus 3-3-2. The thing I like about this is the Orignial Corp team (Trontek) utilizes a 3-3-2 set-up, so playable with the kickoff set, but the Void template from season 2 has a 3-4-1 set-up, which would only be playable with the full box set. So you in essence have 3 team options in the box set versus just the two from Kickoff.

I'd recommend the full box so you get a physical copy of the full rulebook, the ref, and the cards really do add another fun layer to the game. The only we did differently from the full rules the first time we played was keep the ref in the box. We'll figure out how to "cheat" after becoming familiar with the rules.
