I am planning an adventure where these two creatures are fighting in the background and the heroes need to achieve their objectives before one or the other wins. Ideally I want the titan to survive the encounter as its actually the villain here (I am doing an Attack on Titan thing but using the Elysium titans stats). I know that the Elysium Titan is immune to death effects so Baelors insta-decapitation sword won't work; but just in general because I can't get the Baelors stats up on Paizo.

No need to actually play out the combat. You said you want the Elysium Titan to win, so it wins.

Possibly you can't get the Balor's stats due to the misspelling?

I'd focus more on what cool and dramatic things could happen in such a fight, and most importantly, how they could directly provide excitement for the players.

Does one or other get thrown and nearly land on a player? Does one of their powers or attacks miss and destroy a structure or section of landscape? Does one focus on the players for a round before being distracted by an attack from the other?

And of course, when the Titan eventually kills the Balor, what do the players/Titan do in the face of it's death throes?
(Balors explode when they die. As a player, I friggin' hate monsters that explode when they die (lost two characters to exploding balors) but as a GM I freakin' love the drama (nearly crippled the parties airship with an exploding Frost Wyrm in one campaign )

Makes sense. That could be a lot of fun actually.

My group has a habit of disputing things especially since Balor (I got some stats but wasn't sure if it was Paizo but a baelor does 2D6+14 whilst a titan does 6D8+26...Baelor ain't winning) was the big bad in a previous RP but I'll use the excuse that that was a Baelor lord whilst this is a common Baelor.

Trouble is my group has a habit of getting stuck in when they shouldn't. Its more for the possibility of them getting involved. (they're lvl10+some sick gunslinger, samurai and magic weapon shenanigans)

I ve also got a side mission they can do where they can free this good Elysium titan as an actual ally but only if they trust her (which they won't ,these people are paranoid as hell! ).

There's the stats. He's CR20. He gets more attacks than the Titan but each attack does less damage. His spells are also more directly offensive.
