My Wyvern is simply going to be my Griffon Mortar. Ta Da! It's a Wyvern.
Depends how DIY you want to go for an actual conversion. The cheapest would be to go to the hardware store and get some 1/4" PVC tubes, cut at an angle. bundle four together, so they look like mortar tubes angled down.

Pedantically, the guns should be on a turret, so they can rotate independently of the hull - depends on how 'serious' your games are as to whether that would matter to you (and perhaps more importantly, your opponents).
You'll have some problems if you want two identical Wyverns, as you presumably only have one Chimera hull top. So maybe best to call them two different battle-field modifications by local engineers.
The good news is that the 'turret' simply needs to be an unmanned four barrelled launcher, the barrels themselves just being plasticard tubes (personally I wouldn't use PVC unless you're really poor). Depends on what's in your bits box to make the rest of the 'turrets'.
Or if a rotating turret isn't important to you, an easy solution for the ex-Manticore is to give it dozens of small rocket launcher tubes, as a IG equivalent of the WW2 Soviet Katyusha rocket launching trucks - seems IMHO a reasonable counts-as equivalent of the way a Wyvern fires.

I'm making a Wyvern turret out of the turret from the aegis defence line/bastion kit. I did it up as a hydra turret before the plastic hydra kit existed. I just need to do up the mortar guns. Finally an excuse to use the mortars that I had lying around for 10 years, and bitz ordered some extras so that I can make four wyverns. Gonna make a couple dual barrels using them and some plasticard, slap a magnet on them, and voila.
Here's a pic of the bit, what it looks like with the hydra autocannons, and what it looks like on the chimera. I just put a magnet at the bottom inside a tube of plasticard so it fits nicely into all of my chimeras.

Hadn't thought of using that to make a turret. To represent a 'battlefield modification', it looks fine - I just might steal the idea for my counts-as Vengeance weapon battery.

I used an Old Crow Support Turret for my Hydra conversion. Given that the GW kit uses the same sensor package for both, you could do something similar with that and larger calibre weapons:
