Not so, the elementalist can heal with the water magic lines and most of the decent monks in gw1 were protection monks anyway.

Weaponsmith (melee weapon crafting), Huntsman (ranged weapon crafting), Artificer (magic weapon crafting), Armorsmith, Leatherworker, Tailor, Jewelcrafter, Cook
You can have to crafting proffessions at any one time and can switch those in most major cities, the progress track along those proffessions is saved when you switch it out.
Nodes are exclusive to players, you won't have to compete with other people to mine for rare resources.
