Top of my list is always Tombstone. The newer True Grit was good, never saw the old one.. Same goes for Magnificent 7. I tend to not like any movies older than Star Wars though. If you like long, drawn out too much dialog movies, the Hateful 8 is pretty good.

Deadwood on HBO and also Hell on Wheels were great shows. Netflix had a mini series with jeff daniels that was good, I think i twas called Godless or something.

Plenty of classics covered but I'm honestly amazed that nobody has mentioned:

Young Guns 1 & 2

The Quick and the Dead

Dances with wolves

Of more recent releases Hostiles was fairly good, a little off the traditional cowboy path but in the time period Ravenous, The Last Samurai. Then there's HBO's Westworld series for sci fi & cowboys.

Red Dead Redemption 1 was incredible, Red Dead Redemption 2 was sorta meh for me.

The Quick and the Dead. Blockbuster flop, but man do I love that movie. Prime example of why Gene Hackman makes the best bad guy. My brother had bought my children Nerf guns and was playing with them. I was finishing some work on the computer when I heard my daughter yell from the hallway "Time's up Rusty!!" right before feeling a sharp stinging sensation on my neck. LOL

I forgot the name of the film, but Nick Cave made an Australian western a while ago exploring the whole "penal colony with only a few law enforcers vs people with a grudge" angle (on the order of 10 years or so ago). Really nice film as well.

The Proposition from 2005?

I know it's a cartoon, but I honestly consider Rango a decent western. It is deliberately and lovingly cliche and embraces the common old Western tropes.

Plus moles riding bats with Gatling guns to a banjo-tuned version of Ride of the Valkyries.

The way spears worked in the Proposition was impressive.
