The old Ork boyz kit. Amazing conversion fodder, and it comes with a lot of bits.
I'm not sure about the new boyz kits though, the models seem pretty monopose.

They are. It's an aweful "ETB" kit (well, as "easy to build" as GWs kits actually are... I usually find myself cutting all the pegs and glue the models afterwards so it needs actually more time and is harder to build "easy to build" kits than normal kits ), sold at a pricepoint as if it was a proper kit. It's even more expensive than the old boyz despite having one model and one whole sprue less. I think GW had actually other plans with it than selling it outside of a starterbox. It's probably comparable to the CSM in the Starterbox that weren't sold on their own, instead there was a (more or less) proper CSM kit alongside the ETBs from the starter.

Yeah, I found GW's easy to build sets to be terrible. Nothing seems to click into place right, earlier sets were better.
The Skorpekh lord was an absolute bastard to assemble, for example.

Classic 3rd Ed multi-part Space Marines were lterally why I started playing 40k.

For me I can’t really say the best kit but I can name my favorite kit has got to be the chaos marine heldrake. I just love how it looks

I will second Zergsmasher’s nomination of the Dark Angels kits; the Ravenwing, Deathwing and Veterans squads look great, assemble well, give you flexibility in construction and have bits for days.

All you have to do is fire three rounds a minute, and stand

For me, it is the Baneblade.
8 variants in a box + a mountain of magnets = Octablade. Every variant screams 40k, and even the simple transformation from one variant to another is joy.

Out of all marine, guard, tyranid, admech, and GSC kits I've assembled, this one remains my number one.

Probably the new eldar guardians. All options for all units, good mix of poses and head options. Flexible without being needlessly split into too many microparts.

Okay not technically a 40k kit, but I use it for 40k. The MK IV Space Marine tactical squad. Tons of options, everything went together smooth -- even pretty well into it's runtime it required minimal flash cleanup. And the marines themselves were just so much fun to paint. Add in how easy they are to kitbash with modern 40k marines and it was a real winner for me.
