Trying to make some basic squads of Acolytes but having difficulty finding units with las pistols and chainswords. What do other people use. I don't want to use SM scouts.

Depends on what kind of Acolytes you're making

If they're Mechanicum, a squad of those new Skitarii could work. Regular IG infantry or Scions are a good place to start for las-weapons and chainswords, kitbash them with some WHFB Empire models if you want a more posh look for your Acolytes
