So I know they don't use assault squads but would the Death Guard have used Land Speeders? From what I've read of the fluff and based on the Reaping RoW I guess not really? I assume they also avoided bikes and jetbikes?
Am I better off just getting a Lightning to use as my only FA option or would a couple of Grav Speeders be ok as well?

every legion used basically everything, they just had varying numbers of them. For DG's fast attack I would avoid the "hard to maintain' stuff like xiphons, jet bikes, etc. etc. Regular bikes and "normal" fast attack should be fine. I can see a few speeders fit in, so long as it's sparingly. Personally, my DG have minimal fast attack to begin with.
This all being said, you could technically build a bike company of DG and be fine, so do whatcha want. Just remember: DG did NOT like hard to maintain stuff all to much.

Running with the simple/robust theme I'd recommend sticking to Seekers, Bikes, Attack Bikes, and Storm Eagles rather than anything weird, fancy, or loaded with lost technology. No antigrav, flying flare shields, difficult-to-maintain Xiphons, weird Drop Pods, etc.

True, BUT the legion still had access to jump packs and used them. "gave little emphasis" is NOT the same as "gave no emphasis"
the 'no dedicated assault and tactical squads' was expanded in HH book 1 to mean that every marine was trained as both assault, tactical, support, and heavy support along with any other non-specific legion unit (i.e. techmarines, seekers, etc.)
