I am playing AoS with chaos daemons for some time now (pitched battles, with points and summoning/casting limitations/nerfs from General's handbook), but I find my results unsatisfactory. I have varied collection of models, but no matter what I try, I invariably struggle vs beatstick lists like optimized Orruks;
and especially vs Stormcasts eternals, with their ridiculously high saves, damage outputs and butload of Mortal wounds etc etc.
Is there some "good" playstile with chaos daemons that I just miss? Cool combos?

Firstly, Orruks and Stormcast are very strong currently. I play Khorne Bloodbound and really struggle against a Stormcast opponent I play against regularly and have only managed to win a couple of games of the 15 we've played together haha.

Khorne Daemons can be very good though by using large blobs of Bloodletters and using Skull Cannons. Bloodthirsters are also quite good.

Another good way of playing Khorne Daemons is running them as a Blades of Khorne army, and adding a couple of Bloodbound units into the mix. For example, Slaughterpriests and a Bloodsecrator can be huge buffs to a daemon army.

If you take a battalion called the Gore Pilgrims, the two slaughter priests it needs can re-roll their prayers and you can take a prayer which adds +1 to a Khorne unit's To Hit value. Put that on a unit of 20-30 blood letters and they will SLAUGHTER pretty much any unit with their mortal wounds being activated on 3+ or 4+. Not only that, but the bloodsecrator in the battalion would give all of those bloodletters an extra attack.

I'd run this list with groupings of 20 bloodletters though, as units of 30 at that point become overkill and your opponent will likely hate you haha.

This battalion does require a unit of bloodwarriors and a unit of blood reavers but you could make them small and use them as either Cannon fodder or defence for those heroes in the back.

Do you have the Blades of Khorne battletomb?

This is terrible advice. Lesser demon units should never be in groups of 20. Only ever in 10 or 30.

Fair enough
I'm not an overly seasoned daemon player so I had assumed 20 would be a good buffer to stop 10 from dying outright. I'm used to blood reavers haha

I have no Mortal chaos in my collection, apart from some Spawns, as I came over to AoS from wh40k.

Ah okay, that's fair. Well, I don't think it's necessary for a Daemon army to include the Mortal units. Just need to use those bloodletters to their advantage. What's your usual kind of list?
