Hi, I have a question.

How exactly do the rules work? Is it only the units from the Legion book who get them, or do any units you buy from the Army list also take on "Legion (X)" when you buy them and benefit?

Only models with the 'Legiones Astartes' rule gain the bonuses of the 'Legiones Astartes (Your Legion Here)' rule.
So rhinos do not get the bonuses but tactical squads do.
This allows any legion to take 'Legiones Astartes' units and apply thier specific rule.
The legion-specific units, like Justaerin Terminators already have a set legion- specific rule, this prevents other legions from taking them, in this case, Iron Hands (for example) cannot take Justaerin Terminators.

Any space marine unit with the 'Legiones Astartes' rule you buy. Legion Tactical Squads, Legion Heavy Support Squads, Legion Apothecaries, and so on. That is assuming you are making them all Legion (X), of course, and not taking an allied force of Legion (Y). In that case, you'd have models that there Legion (X) and models that were Legion (Y).

Also, obviously, Mechanicum and Imperial Guard troops don't get them.
