So I wanted to run an Artillery Company and came up with the following list.
Infantry squads bubblewrap the artillery and prevent deep strike trickery.
Changed it around to reduce the amount of useless HQs. Had a few points spare so gave the commanders WYSIWYG weapons to match their models. I could also give the Plasma back to the infantry squads. Also added an Aegis rather than a Hydra. Added a couple of Hellhounds.

any reason why you took a special weapons squad over a command squad?
Special Weapons Team (6 models) are limited to 3 where as Command Squads (4 models) are limited to 4 and they can take a medic. Unless your idea was to spread wounds to the non special weapons models.
Ive thought of squeezing 3 Command Squads in a Vendetta and just dropping them off wherever needed.

Pretty much. A four man command squad (4x6) is the same points as a six man SWS (6x4) but has less 2 less ablative wounds.
They were pretty much an Elite tax to get the Brigade filled, hence the 3x sniper rifles as I couldn't fit 3 more Plasma guns in the points.

dont think you could go wrong either way. the Medic rely on the dice roll.
but the thought of dropping off 12 plasma guns and all rapid firing is entertaining.

Given the Amount of Artillery would a Master of Ordinance be worthwhile?

Platoon commanders are Elites, so you'll need to shuffle your HQ and Elite tax units a bit.

Good point, swapped out the two Plasma SWS for two Master of Ordnance.
Doh!
Swapped them all back to Company Commanders. Had to swap the Sentinels to Heavy Flamers rather than Lascannons and drop two plasma guns from the infantry squads.
Now 2000pts dead on.

Looking good and scary! - it's amazing how much you can fit into a guard list now.
Swapping a vehicle for a Hydra would be thematic and useful...
Are the old-school griffons any good now? (I'm assuming FW)

48" Heavy D6 6/-1/D3 Roll two dice for hits and discard lowest. Ignores cover and Line of Sight. 15pts less than a Wyvern.
I have three of the old GW metal/plastic models though.

I would suggest Gunnery sergeant Harker as a very viable candidate to to replace one of your MoO because not only will you get a better MoO aura you can re roll 1s INSIDE the 36' bubble that the MoO doesnt offer BUT for 12 more points (-8 because you get a BETTER heavy bolter) so basically for +4 points and some tweaks in the regiments keywords of your basilisks you can have an even BETTER artillery line! Sure you lose the one shot artillery bombardment but you replace that with DOUBLE the range of the bubble and a Heavy
Bolter. Now if you are like me and you don't like rambo clones in your army (because apparently wearing only a t-shirt called "flak" armor for some reason and having muscles that even a bodybuilder would be jealous of translates to the game as a 5+ armor save). Just model a lone guardsman carrying a heavy bolter from some spare sprues of your hwt .

Instead of Basilisks, take Earthshaker Batteries. Cheaper.
Wyverns aren't point efficient anymore. Go for Mortar HWTs, Quad Cannons or drop 2 for a Manticore.
Elisyan Sniper Teams are just straight up better than Sniper SWTs. Still get your ablative wounds
Tauros with a HF are straight up better than Sentinels. Much faster and get a 5++ if they move over 10"
The extra CP for the Supreme Command detachment isn't worth it. Your HQs are of limited use in this list. You want Yarrick, Harker, MoO and Sabre Platforms to buff your artillery
Tarantulas with twin lascannons are a tiny bit more than Lascannon HWTs but more survivable

Unfortunately I don't own any Quad Mortars, Manticores, Tarantulas, Elysians, Sabre platforms or Tauros, otherwise you have a good point.

LOL!
I made some custom tarantulas a few years back using the flat side of sprews for the legs and a round top hatch for SM tanks as the turret head, with 2 HWP HB's glued underneath.
If you have any of the Kasirkin or even Scion models you could run them as Elysians (they look similar enough), and if you really like it and plan to take the list to an official tournament, then you can invest in the true models.
You could potentially half-proxy the Quad mortar by taking the turret off your wyverns and setting it on a screw base. Again, this would be more for play testing than official tournament play.

I'm not convinced a Wyvern is outdone by a Quad Mortar to be honest. You lose a point of strength but can re-roll wounds which should make up for it? It is 8pts more expensive but that's the Heavy Bolter, which could see some use.

You could get few points from griffon/earthshakers using forge world artillery immobilised battery.
