So I bought a few of the new tanks and it has the option for using magnets to bolt on the open and closed hatch. Has anyone else done this? I am not sure what type or scale of magnets I need or where to buy them from. Don't fancy looking on Amazon until I have the right stuff.

The main question is, what is the size of the space for these magnets? Is it pre-made holes or do you drill the holes yourself?
The answer is, buy the magnets that are the same size as the holes.
As for a magnet source, https://www.kjmagnetics.com is easy, cheap, ships fast, and has a very wide range of magnets and a tool for you to narrow down the size you need e.g. 1/8th inch to 1/4 inch diameter, 1/16th inch to 1/8th inch thickness, etc.

I bought 5mm x 1mm rare earth magnets off Amazon. $12.99 for 100.
That to me reads 2 x 8mm magnets. But what thickness?

I would say to the OP, if you have the models in hand like you say, measure it. Put a paper clip or whatever into the hole, mark it with a pen when it stops going in, take it to a ruler. Read that number, and get something slightly below that in thickness for your magnets, with 8mm being the diameter.
