Am I right thinking, that it's possible to give the sergeant two Chainswords and a Storm bolter?

No, you could have one chainsword and the storm bolter, or two chainswords, but not all three.

Did it change in the codex?

In the index, under Sternguard, it says:

The Veteran Sergeant may replace his bolt pistol and special issue boltgun with items from the Sergeant
Equipment list

And under Sergeant Equipment:

Up to two weapons can be chosen from

Which got me thinking that it's possible to choose 2 weapons and 1 gun. Or is it since he's giving away 2 items, he can only take 2?

The way it's worded actually does seem a little ambiguous, as it says "items" instead of "two items." However, you're replacing the bolt pistol with an item from that list and you're replacing the special issue boltgun with an item from that list, meaning you can take two items, with further restrictions contained within the list itself.

He only has two items to replace. There are two lists to choose from: items choosable twice, and those he can only have one of.

Doesn't stop there being a maximum of two weapons to swap for two others in the first place. You can't swap two for three.
