Obviously a lot has changed with 8th Ed, but flyer rules have also changed.

Let's talk about the best ways to utilize them as well as tactics.

I field an army of Valkyries and Vendettas. My struggle when to use hover jet or stay airborne and take advantage of supersonic.
My biggest struggle is finding the best way to actually stay on the table on a standard 4x8. I fly a diamond pattern around the table,but the movement makes it difficult to hit my targets.

How do you utilize your flyers?

Fliers are good, but dont take to many of them, more than 3is way to much IMO. 2 is ok.

You need to just think ahead a couple turns, just as long as its in range they can shoot, you dont need to be front facing, you can shoot out you tail.

They arent to hard to stay on the table, just move in a square shape of some type.

Eldar flyers are very easy because they can turn both before and after movement. The Hemlock is possibly the best aircraft in the game.

Here's a recent result from tournament play that indicates that having mass flyers can be very effective (if not all that fluffy for a Blood Angels player...)
