I have roughly 2000 points of eldar and am looking to build something fun rather than competitive, but still good enough to beat up on somebody. I'm not sure where exactly to go in terms of building this army, I'm kind of new to 40k.
I'm thinking something Alaitoc or Biel-Tan would be fun suggestion please! Here's what I own:

1x Wave Serpent
1x Vyper
1x Falcon
1x Crimson Hunter
3x Windrider
5x Wraithguard D-Scyth
5x Warpspider
5x Striking Scorpion
5x Fire Dragon
5x Ranger
19x Dire Avenger
19x Guardian Defenders

Lucky for you fire avengers are silly good this edition. I really like rangers better than sure avengers for troops. I’d just buy some scopes and run the dire avengers as such. 5 man squads. Just play it as is and think about what you lack if you are losing! If a unit you use is working well and you’re enjoying it get more of them. Warpspiders are meh. Falcon is meh. I’d run it as a second wave serpent somehow. They still sell both the last edition box set and the new one for like $89 online. Both come with plenty of useful stuff if you’re looking for some purchasing values.

Fire Avengers? Not sure if you meant Fire Dragons or Dire Avengers. I'm guessing you mean Dire Avengers, but i'm not sure why you think they are "silly" good?

I would run Alaitoc and load up on Rangers.
