So Thanksgiving is tomorrow (for the US) and Xmas will be here in no time. What are some of your favorite things to cook for the family/friends for the holidays? Share a recipe!

I will start with my Easy Cheesy Taters

1 2-pound bag of frozen, cubed hash brown potatoes (or cube 2 pounds of fresh ones)
2 regular sized cans of cream of chicken soup
2 8-oz bags of your favorite shredded cheese (I usually do 1 sharp cheddar & 1 pepper jack)

Literally all you have to do is mix all the ingredients together in a big bowl, then dump it into a suitably sized casserole dish. I usually use a disposable aluminum pan for easiest cleanup. It’s a good idea to spray the pan/dish with cooking spray too since it might stick to the bottom. Pop it in the oven and bake for an hour at 400 F, then enjoy the cheesy goodness. Maybe around 45-50 minutes if you use fresh potatoes. I always use frozen since it’s faster and easier.

You can use any other canned cream soup, but I found that chicken works best. Cream of celery makes it taste like celery, same deal with cream of mushroom, but chicken gives it a nice, rich taste. You can also use more cheese if you like, but I found that 2 bags seems to be enough, and it’s still plenty cheesy. I tried 3 bags once, and it seemed a lot greasier.. I guess from the cheddar grease.

I usually make 2 batches for our holiday dinners and they go real fast. Everyone loves em, because cheese.

Watching a Christmas special last year about Victorian Christmas recipes really made me want to try a proper oldskool mince pie recipe with actual meat in it.
I'll probably not use tripe though as it is quite an acquired taste, I need to Google in earnest to see what the other options are.

It's not really a traditional American thing, but I love making (eating) Colecannon, and it's crazy easy, which is ideal because I have a 2 hour drive to Thanksgiving and we normally exchange Christmas presents at the same time, so I have more than enough to get ready for.

Anyway, colecannon:

4 large potatoes (I think I normally use russet)
4 tablespoons butter
2/3 cup cream (I'll use whole milk depending on what I have)
1/2 small head of cabbage
Green onions or scallions

Cube and boil potatoes until tender. Transfer to bowl and mash and mix with butter and cream. Boil cabbage for a minute or so in remaining hot water. Drain and add to bowl along with the green onions.

Easy and delicious. Depending on what else I'm making and who is going to be eating it, I might "Americanize" it by chunking up some bacon and tossing it in there, because I have a problem.

Edit: Oh, yeah, and obviously: Salt and pepper to taste. Such a no-brainer I didn't even have it written on the recipe, but you never know I guess.

I like adding bacon and Jerusalem artichokes to kale colcannon as well and I'm Irish so I think you are on safe ground there
