Heya there DakkaDakka!

It has been a while, but in my recent game I got into a little dispute with a fellow hobbyist (not even my oppenent lmao). I've scoured the FAQ's but can't seem to find an answer to this obvious "problem", nor have I found a thread here (might have missed them though! Sorry if that is the case!)

If a melee weapon has 2 weapon profiles (like the Mighty Axe of Khorne or Mortarion's Silence), are all attacks made with the same profile or can you switch between profiles? It's not a different weapon (because you know, it's the same weapon as per rules) and does say : 'When attacking with this weapon, choose one of the profiles below:'

To me that sounds like you can't really mix and match the two profiles among your attacks RAW. Am I mistaken here? Is there something I've missed? What are your thoughts! I'd like to know

You have to declare which profile you are using with each attack. So, if you have say 3 attacks you have to say for your first roll "I'm using Mode A" then you do the same with your second and third attacks. You can speed roll all of the attacks that are using the same Mode but RAW each attack must be declared separately.

You declare how many attacks are going to be made with each weapon profile you have before you make any attacks. "Each time a model makes a close combat attack, it uses a melee weapon – the weapons a model is equipped with are described on its datasheet."

If you have 5 attacks and 2 weapons, one of which has multiple profiles, you can split those 5 attacks between each profile at your discretion.

Example: Mortarian has 5 Attacks, he can choose to make 3 with Silence and 2 with his Base Profile. Of those 3 with Silence, he then can choose to make 2 with Reaping Scythe and 1 with Eviscerating Blow.

From the Deathguard Faq.
Q: If Mortarion attacks an Imperium unit with Silence (using
the eviscerating blow profile), and the hit roll is a 6 (allowing
him to make an extra attack with Silence due to the Death to the
False Emperor ability), does the extra attack have to be made
using the same profile, or can it be made with the weapon’s other
profile (reaping scythe) instead?
A: The extra attack can be made using either profile.
Since extra attacks get to switch profiles I can only assume normal attacks are allowed to aswell.
I would just say you have to declare how many attacks with each profile before rolling as per the rulebook
If a model has more than one melee weapon and can make several
close combat attacks, it can split its attacks between
these weapons however you wish – declare how you will
divide the attacks before any dice are rolled.

The answers already given pretty comprehensively give you what you can do in this situation, but I thought I'd clarify a little bit WHY.

This quote tells you to choose one profile when 'attacking'. This word is very important here. In game terms, attacking is the same as making an attack. So the rule says you choose one profile each time you make an attack. If the choice applied to all attacks then it should instead say to choose one weapon when 'fighting', as a fight encompasses all the attacks a model normally makes in the fight phase.
