What is that weapon on the back of Colossus Morlock from Bakunin Starter and how well is it attached to it's back (can it be removed without damaging it too much)?

My guess, just going by past Infinity models, is that its a completely separate piece.
As for what it is, it looks like a Combi-rifle with a LGL. One Morlock profile has a Combi-rifle with a Smoke LGL.

If you do choose to leave it off you can just greenstuff over the hole and the gap in the detailing - it is really easy to do.

Simply not glueing a weapon and covering the hole won't be enought, i think. There's also a shoulder strap on the body that you'll need to cut off or place something else like a bag or another gun.
For example, you can easily replace it with a chain rifle (if you have spare).

That looks awesome!
Where would one find spare Chain Rifle? Are there any sets where you get spare ones or is one doomed with everlasting chain of conversions and leftover bits?

There's one in weapons sprue from Ariadna spec-ops. You can probably multiply them with instant mold and greenstuff (not sure about quality of result, never done that).
