So, I'm looking into starting Infinity at my FLGS, but I'm really not sure how dense the terrain should be on the table, what sort of terrain there should be, etc. etc.

Lots. The more the better. Ideally, you'll want a few fire lanes but generally no one should have to move more than 4" without being able to get behind cover of some sort.
