How do?

Just invested in a Food Dehydrator, so I can make my own dried fruit and of course Jerky.

For suitably LARP Jerky, I’m looking at Game meat, rather than the traditional beefs. And I’m wondering if anyone has experience. Or just a marinade recipe?

Look up Alton Brown Jerky Recipe from his Good Eats TV series (Should be able to find it on you-tube)

If you want true LARP jerky, follow his instructions, I did......MUCH better then a dehydrator.

There are more jerky recipes than you can shake a beef stick at. In my opinion, the best jerky is a perfect blend of just three ingredients: meat, salt, and smoke. Get that balance right, and you can start experimenting with spices. One thing to consider is if you want to use the salt that has the nitrite stuff in it: pink salt, Prague powder, it has lots of different names.

Procured all the bits and bobs for the marinade. Run to the Butcher’s tomorrow to get the flank steak.

Should have the first batch done by Thursday evening

Well, first batch is done, and it’s mighty fine!

Now, to attempt Cidered Venison Jerky! Just need the Venison, Worcester Sauce and Mushroom Powder. And Garlic Powder as I’m fairly sure I’m out.

Cidered Venison worked well, second batch of Alton Brown’s Beefs came up beautifully. And now, drying some Mango.
