I haven't built the army list yet and I'm looking at the composition, but I've got a query on Striking Scorpions.

The trend on here with most armies seems to be to fill out units to their max number, but with aspect warriors taking an exarch, should I be looking at it slightly differently?
Scorpions in particular seem to be a Scorpions Claw delivery system, so if I have 10 figures, would it be better to run with 2 squads of 5 so I can include 2 exarchs, or does the smaller squad size make them too vulnerable to being killed off early in turn1?

Well, I think its better to have MSU units when it comes to Aspect Warriors.
Then you have no morale issues. Moreover, a ''full'' MSU unit is strong enough to dish out damage.

You are correct, you want to Max out the most useful aspect of the squad (which is the exarch)

With eldar you really want to max out the amount of exarchs that you have in general because they have special rules and wargear that makes them a lot more valuable than a typical soldier and luckily the exarch itself comes at no additional cost. The only times you want to bring large squads of aspect warriors are when they rely on a psychic power or stratagem which can only be used once per turn so you would want to use it on a big squad. Like using quicken on shining spears or guide on dark reapers

Yep. Generally 8th ed is MSU always unless there's strategem/psychic power to play. About only advantage 1 big squad is that all gets to attack without worrying about interception strategem but even that seems to be not that popular these days. With codexes out most armies are starving for CP's so MSU has gained there as well!
