So I know there were bikes in the HH times but Im not sure if this will work? I have some thunder hammers and MK VI (beaky) helmets ill be adding to these guys.

You can make them work, the mk 7 legs is the only hiccup I'd have with them (personal tastes and all that) but you can definitely use the plastic bikers if you want

Crack on, they are really easy to convert for the weapon options too, plasma pistols fit quite nicely into the bolt gun slots for plasma guns for example

Go for them. As long as you put some HH bitz or convert the guys to resemble them like the marines from old or new artworks its ok for me.

They look good to me! If anyone complains about the Mk VII legs I'd point them to the early Horus Heresy novel book covers (Fals Gods and Flight of the Eisenstein particularly come to mind), which have plenty of knee pads that are basically MK VII in appearance. Besides, Mk V has similar knee pads so why couldn't it be a unique variant? It's not like you are using complete Mk VII.

As for the bikes themselves, I've never read any sources talking about variants of bikes and their introduction, so you are good there. Heck there are normal 40k rhinos and land-raiders in various background pictures in the first couple black books, and one of the Salamanders even has a Godwyn pattern combi bolter in one their profile pictures, so there's good precedent 40k equipment was present in various numbers during the Heresy.

Lastly what Legion are you making them? Any Legion that operates in and around the Sol system can easily claim to be re-equipped with Mk VII, which was in its development at the start of the Heresy (you could argue field testing took place like the Mk VI did with the Iron Warriors and Raven Guard too to be honest, but the Sol system forces are a sure bet).

I was going to mod the legs, still working on the miniatures as parts come in. I'm just trying to find some MK IV legs to cut up, hard to find a set of 3 on ebay for some reason lol.

That hardly seems worth the effort - the only thing you need to do is change the kneepad, of which MkIV is just a curved rectangular plate with the top corners cut off which you could make out of plasticard.

Thunder Hammers aren’t an option… the closest thing they can take is a power maul, which isn’t usually useful in 30k. I’m a fan of power axes for the sergeant and 1-in-3 regular guys (the maximum allowed), and meltabombs on everyone.

But yeah, with a head and torso swap I’m fine with 40k bikes, especially after the pricing structure modification. I’d notice the Mk VII legs and arms, but I don’t care - in part because they’re difficult or expensive to substitute. Kromlech has Mk II-style biker legs but I don’t know of any others.

For certain legions, Chaos bikes work well too. They have Mk VI legs, but Anvillus backpacks and the usual chaotic decorations.

MK7 arms are no big deal. kromlech offers great heresy erea biker legs for cheap.
