They may be scratch builds or conversions. The hands don't match any of the Dkok models I can find either in my collection or on the FW site.

Yes, they are an option. The kit comes with hands for both the earthshaker and medusa shells, and the catalog pictures are built using the earthshaker version. I just double checked a kit I have and they're definitely included.

Also, where can I find these small wheel handles that one guy is holding? I didn't have that accessory in the Heavy artillery kit:

It's the aiming dial from the medusa/earthshaker kits (mounted on the side of the gun). It isn't included with the crew.
